Waffle Window

When your mom's in town and you live in Portland...

You eat.

A lot.

There are just too many fun places to show guests.

We opted for the Waffle Window.

It's this glorious place that takes fluffy waffles and tops them with the most desirable goodness. I had a peanut butter, chocolate, and ice cream one! The crowd favorite was the blueberry cheesecake. I only wish I had a closer picture of the actual waffle.

Guess you'll just have to come see it for yourself.

When we lived in Utah, the first thing I did every winter morning was slowly walk over to the blinds; I'd creepily lift them, one eye still closed, bracing myself for the bad weather I'd have to drive in.

Now that I don't have to drive in it, I actually like the snow.

Maybe I'll even go play (stand?) in it, who knows.

Oregonians are funny when it comes to snow. There hasn't been much (read: barely any), but the little bit has warranted cancelled classes, chains on bus tires, incessant talking about it, and of course, snowmen including...

Before we left Utah, Joe and I went to an exhibit and loved all the posters by Travis Bones. There were so many we wanted to get and they're only $20(ish) each. I emailed him a little later to see about making a custom one for Joe's band as a surprise....but he charges ~$800. Whew. If you have the disposable income, I completely recommend having him doing one for you, otherwise, enjoy his already made prints. I really like that he mentions the other bands that played in the venue with the one featured (he also does posters for the twilight concert series that happen in SLC every year). Pretty cool. I can see Joe's future studio room with a couple.

- Having a husband who is such a hard worker, who cooks and cleans,dances when no one's looking, and makes me laugh endlessly.

- Friends I've grown up with who are always be there for me- even when they live across the country, and new friends who will become that.

- Coconut. Coconut water, coconut flour, coconut palm sugar (yes, they make sugar out of this blessed stuff), coconut milk...etc.

- Biggles

- Artisan foods and all the bakers/growers/cooks/chocolate makers (you name it) who refuse to settle with mass production

- Snuggly blankets

- Gyms that offer yoga

- Loose leaf tea or hot apple cider with cinnamon sticks on a cold night

- Sunny strolls

- Nightly dinners with Joe

- The 30 mins of reading I get on my bus ride

- Thrift store finds

- Politeness/manners

And of course, this holiday season. We're still deciding where to go, possibly Big Bear with my dad and siblings, Washington with my mom and new step-sibs, last minute trip to Wisconsin, or maybe just a lovers Christmas. Either way, I'm excited to get and decorate our tree this weekend and kick it all off.

Joe's parents came to town last month and we headed straight for the coast.

The Garibaldi Coast.

We're lucky to have Joe's uncle and his girlfriend living just an hour south of us, so they came with.

We stayed right on the harbor, ate seafood (I had my first oyster shot!), had a bonfire, got soaked in the rain, and browsed the local antique shops.

The coast never faileth.

Occupy Portland.

Police officers led the ~10,000 protesters down Broadway to outside my building and, fittingly enough, into Liberty Square. It was organized madness. There was a lot of chanting and music blaring

(starting with Bob Marley, obviously, then turning into Latin techno… which was confusing.)

It’s part of the learderless resistance Occupy Wall Street, but it was also an umbrella protest, where people could protest whatever they felt like. There were the expected financial crisis signs to ‘end petlessness’ (Oregon Humane Society slogan)...

...and an honorable mention to the guy who taped a sign to his body that read

‘I’m sick of holding signs’.

They marched to the waterfront last night, but they can only occupy until 9pm tonight.

The Portland Marathon is this weekend...

...and they have a permit.

The occupiers don’t.

Typical.

It was unreal to watch this unfold.

All the way up Broadway (the street on the left) was packed.

My Dr. put me on the Paleo diet.

She's tweaked a few things, but in short,

it's the raw lifestyle with grass-fed, organic meat and poultry, and wild fish.

It's also known as the caveman diet

if that helps give you an idea of what it entails.

It's been more than a little daunting,

but I have great supporters and I'm learning a lot.

We knew my first steak in life had to be done right.

So a 28-day aged salt and pepper filet mignon it was.

I'm not going to lie, it was beyond amazing!

I'm hearing of a lot of raw lovers who have started to incorporate healthy meats back into their diet.

I can relate to this girl's story entirely...

If there is ever a raw dessert that had the exact texture, smell and taste as the "real" thing...

it's this cheesecake.

Don't take my word for it though, head out to your nearest Whole Foods

and hit the bulk section!

Raw cheesecake recipe

Inspired by recipes in Ani Phyo’s book, “Ani’s Raw Food Kitchen” + The Rawtarian

Crust ingredients:

1 1/2 cups combination of walnuts and almonds
1/2 cup dates

1/4 cup dried, unsweetened coconut

1 pinch sea salt

White cheesecake filling ingredients:

3 cups cashews

1/2 cup lemon juice (or less if you're not that into lemons)

3/4 cup agave or honey

3/4 cup coconut oil

1 tablespoon vanilla

Up to a 1/4 cup of water, if necessary to facilitate blending

Fruit topping ingredients:

2 cups frozen mixed berries (left out at room temperature for ~45 mins)

1. Throw the nuts and dates into your food processor (don’t add the coconut!). Process nuts and dates until well processed but still airy.

2. Next, get out your cheesecake pan (or just a basic glass brownie pan) and sprinkle the coconut on the bottom as your first layer. The point of doing this is to make it so it’s easier to remove the cheesecake and the coconut stops the crust from sticking to the bottom of the pan. Then press the nuts and dates down into the pan to form the crust.

3. Throw all cream cheese icing ingredients into your high-speed blender and blend! Add as little water as necessary to facilitate blending. (Try to add as little water as possible.)

4. Let berries mix stand out while you place the cheesecake in the freezer for an hour or so (so that it will firm up).

5. Pour the berries on top of the cheesecake after an hour. Replace the raw cheesecake recipe back in freezer. Freeze until this raw cheesecake recipe reaches the desired consistency OR enjoy right away!!

6. In the future (or later that night) defrost cheesecake for about one hour before eating or just slice from freezer and enjoy!

This guy had a birthday last week and man, oh man, am I glad he was born.

He wins best all around in life. In the same day he could score an A on yet another exam, dominate any game of sports you throw at him, bring a new perspective to church doctrine that will blow you away, help his wife with dinner and then offer to clean up, make sure he gets his weekly call to his mom, dance spontaneously for joy and then pick up a guitar- switching in time signatures that are difficult to wrap your brain around...

...and all while being the most honest, humble, kind-hearted gentleman I've ever known.
I don't know where he came from, but I'm glad I have him forever.

Long story short: He's my favorite person.

Short story longer: My favorite person and I are going to Hawaii and celebrating his radness (not the easiest birthday secret to keep for so long, but well worth it for the look on his face!)

One of the best tips I learned when I lived in Hawaii

has made eating this tropical fruit even more enjoyable.

Cut the top off your pineapple and then let it sit upside-down for a day.

we made them treats that fit their personalities just right.

A little sugar, a little spice,

and a whole lot of nuts (in the best way).

They were such a hit! Joe couldn't stop coming back for samples, my dad ate his big bag in one sitting and Joe's dad opened his early and, from what I hear, wasn't the best at sharing.

I couldn't help making a raw version for myself.

Soaked, air-dried nuts in a honey, cardamom, cinnamon, allspice, cayenne goop.

Then dehydrated for a day.

To be completely honest, there weren't very many left at the official end...

It's so easy and you can throw in anything to spice it up.

Soak 1 1/2 C. of almonds in filtered water for 12 hours.

Rinse in strainer until water runs clear.

Throw 1 C. of almonds + 2 1/2 C. water in a blender

blend. blend. blend.

If you really want to sweeten things:

add dates or honey/agave/grade b maple syrup before blending.

Strain through cheesecloth over a mason jar.

Snack on the extra almonds! Let them air dry and store in fridge

or put them in cup covered in water in fridge.

Make sure you keep the pulp, so you can make things like this!

I love adding vanilla and a lot of pumpkin pie spice to the milk

before I put it into cereal.

Fruity cereal.

Stuffed Bell Pepper with Pumpkin Seed Herb Pâté (raw)

1 C. soaked* raw pumpin seeds

2 T. water

1 T. fresh lemon juice

1/2 t. crushed garlic

1/4 t. sea salt

Dash of cayenne or black pepper

1 T. minced red or green onion

2 t. minced fresh dill weed, basil or parley.

For Sunflower herb pâté:

replace pumpkin seeds with soaked, raw sunflower seeds

Food process all but the onion and dill.

Transfer to a small mixing bowl and mix in onion and dill

Voilá.

*soak 1 C. pumpkin or sunflower seeds in mason jar.

Fill with cool water, screw on lid, and soak for 6-8 hours at room temperature.

This makes them easier to blend in food processor.

We exited "newlywed" status* on the 28th.

One of my favorite things to hear from Joe is when he says

it still feels like we're on our honeymoon.

We became official in the early hours on his birthday. I had his best friend pack his bags and take off work for him and later that day, after his band played that night at Velour, I asked him to come to my car with me. I gave him his birthday gift and watched him open it. It was the book "1001 Things To Do Before You Die" with a bookmarked page. He turned to the bookmark and read "Vegas" where in highlighter, "Let's get out of town...tonight!" was written. His best friend and my best friend jumped out from underneath blankets in the backseat and we hit the freeway.

This is our first "official" picture taken at dinner in Vegas.

I've never known anyone so different and so like me.

I'd been hearing about this amazing doughnut place for months. I'm not a big doughnut fan and so I was pretty skeptical, but I love a good treat and I was intrigued when I heard they carried a vegan variety. The line of the hole-it-the-wall bakery extended outside and wrapped around the building. I liked it already. Once inside, there's no denying all its tongue-in-cheekiness. Their motto "the magic is in the hole" and the PG-13 wall decor imply, that yes, the guy with matted dreads and opened flannel will in fact be serving you this morning...with a smile. The doughnuts are one-of-a-kind, featuring favorites topped with Captain Crunch, Fruit Loops, bacon, Grape drink mix, Tang, and Oreos. The man in front of me in line, while not wanting too much of the largest doughnut asked if the phallus shaped "Cock-N-Balls" came smaller, to which the cashier replied, "yours might, but ours don't. What's better than a roomful of eye-candy and a witty server? The taste of what you'll spending your next $1 on. From doughnut passerby to craver, believe me, Voodoo Doughnut will never disappoint your tummy, wallet, or humor.

Did I mention I'm a frosting person and a nibbler?

"The Village"

The last time I was in Oregon, we drove around looking for places to live. The second we passed through Multnomah Village, I knew. It's the quaintest part of town and it seems to be the best well kept secret. With a stretch of boutique shops and eateries, it such a fun place to walk around, grab a bite and read (and it's within walking distance from our apartment!). Apparently one weekend a month, when all the shops close, music is played in the streets (more on that later). Sorry to sound like a travel brochure, I can't help it! It instinctively reminded me of where I grew up in Old Towne Orange and every time we talked about places to live this was the only place I could see us being (luckily Joe felt the same way). The antique shops, the happy, genuine people, hole-in-the-wall restaurants. Really everything minus the fountain and circular layout is just like Old Towne. I can't believe how we've only been here for almost a week and how right at home we feel. Every morning I'm so excited to get to know the place a little more.

We bonded over a spontaneous conversation about Mr. Meyer and laughed about how he would tell stories involving his little Mr. Meyer, referring to it as his 'turtle' (I knew we were destined to be friends) and we haven't really stopped laughing since. The other day I randomly threw some almond butter in my quinoa and LOVED it. I thought how great it would be to find a recipe for it so I browsed around the internet, but the only mentionable I came across was a food blog called Quinoa & Coconut, the site had great ideas and I love coconut more than any sane person should, so I wasn't too unsatisfied. Alas, the craving remained.

Tangent: Last night I helped the cutest little boy make a leprechaun trap (for St. Patrick's Day). He thought taping as many of his small green toys to the box would help it lure them in and I thought that was pretty clever. We kept asking each other questions like, "well, how will he get stuck, won't he just leave" which, obviously, the answer was we had to put green things IN the box, he'd eat, get too fat, and wouldn't be able to escape through the small hole in the cardboard. Caught.

After we finished, he wanted to see a "real" leprechaun. I googled it and scrolling quickly so he wouldn't notice any "naughty leprechaun" women, we stopped at this picture and he yelled, "THERE HE IS!"

After, we looked leprechauns up on Wikipedia. Apparently, folklore has it if you catch one you are entitled to three wishes when you release them.

ANYWAY, he MUST have caught one.

AND maybe I got one wish to be granted because I helped with the trap and maybe my wish to find an almond butter/quinoa treat vibe was resonating somewhere and maybe it was granted. Tonight. Yes.

Peanut Butter Sandwich Cookies

(Yes, I can read- I'll use almonds instead. It'll be amazing.)

Do you love quinoa? Yet to try it? It's wheat free, gluten free, has a low-glycemic index and tastes great with most everything. I eat it when I want something really filling and now to feed my seemingly endless sweet tooth.

By far Costco's best money saving item is on their gigantunormus bag of it for $10

(usually you'd find it for that price at at least half the size).

Peanut Butter Sandwich Cookies

If you are allergic to peanuts, almonds or cashews would be a nice substitute. If you are allergic to all nuts, I’m sure sunflower or hemp seeds would be just as nice.

1 cup sprouted quinoa
1 tablespoon lecithin
½ teaspoon sea salt
2 cups raw peanuts
1/3 cup agave
2 teaspoon organic vanilla

In a food processor, process sprouted quinoa, salt and lecithin into a powder. [Note: I like to dehydrate the sprouted quinoa until it's dry. If the sprouted quinoa still contains a bit of moisture, the quinoa, salt, and lecithin will process into a dough-like mass.] Place the quinoa mixture into a bowl. Set aside.

Using the same food processor, add the peanuts and process into peanut butter. Add the agave and vanilla, and continue to process until combined. Then add the quinoa mixture/dough to the peanut butter in the food processor and process until the mixtures combine and forms into a ball.

Freeze dough for an hour. Take a rolling pin and roll out dough and shape cookies into desired shapes. Dehydrate for 4-5 hours turn and continue dehydrating for 4-5 hours or until cookies reach the consistency you prefer.

NOTE: At room temperature the dough is not easy to manage, it is sticky and not so easy to handle. It will stick to your fingers. Freezing the dough at least an hour makes it much more manageable. Flatten the dough on a wooden cutting board. Leave the dough on the cutting board and place the board with the dough in the freezer for a half-hour to an hour.

After a half-hour or so, place the cutting board on the counter, and working with a rolling pin flatten the dough to the desired thickness. Shape the cookies using a cookie cutter. Use a spatula to lift, remove, and transfer each cookie from the cutting board to the dehydrator tray.

Flattening the dough on the cutting board was a technique that made it effortless to roll the dough, especially if you want to make fairly thin cookies. Placing a cutting board in your freezer may or may not be a practical step for you. It would depend on how much space you have in your freeze.

Makes [depending on size] about 17 – 24 individual cookies or 8 – 10 sandwich cookies

Ah, one of my favorite countries is New Zealand! Hands down the most gorgeous (If there's one that beat it in fun it'd be Paris, but I was with Joe and on our honeymoon...given). New Zealand is in a league of it's own. This backpacking trip to the South Pacific was with a girl I barely knew and another girl I met at the airport while about to get on the plane. What's in your water?

I'll admit it... I used to carry store bought water bottles with me everywhere. constantly. Smart Water was my drink of choice. I switched to a nalgene and filtered tap water because, well, it just made sense environmentally and monetarily. Only recently have I begun to hear of how bad bottled water is physically.

You think it'd be easy for a bottled water company to disclose the answers to easy questions like:

Where does the water come from?

Is it purified? How?

Have tests found any contaminants?

nope. Of the ten best selling water bottles, only one, Nestle's Pure Life Purified Water, answered all three. In July of 2009, Environmental Working Group (EWG) released it's first Bottled Water Scorecard and the newest EWG survey consists of 173 bottled water products.

VEGAN COCONUT CHOCOLATE CHIP COOKIES

3/4 cup coconut oil + 1 teaspoon for greasing the baking sheet

1/4 cup water

1/2 cup dates, pitted

1 teaspoon vanilla

1/2 teaspoon baking powder

1/8 teaspoon baking soda

1 cup gluten free all purpose flour (Bob’s Red Mills)

Pinch sea salt

2 oz organic vegan chocolate chips

Preheat oven to 350

Mix all dry ingredients in a large bowl.

In a separate bowl, mash the dates until you have a thick paste and set aside.

Warm the coconut oil until it's liquid and add to date paste with vanilla and water.

Add the wet to dry and mix until combined.

Lightly grease a baking or cookie sheet with extra coconut oil and place cookies in the oven for 9 minutes.

We decided to take a spontaneous trip to California for New Years. OF COURSE, since we were leaving the day after we made our decision, it snowed that night. Horribly. The day was full of "should we go?, should we stay?, we should just try...". We tried anyway...

but, didn't get far. 30 minutes and heaps of disappointment later, we turned around. whiteout. woit's out. The next day had the same questions, but with more 'ice' inclusions. I think our word count went something like this:

Joe made the trip happen. I didn't want to be disappointed again, but he was determined. We packed again, he white knuckled the steering wheel until we hit clear roads, and we made it through! Merry Christmas! We met up with the Woits in Vegas for an early Christmas. Here are some highlights:

The Wynn buffet. I think I've Pavlov-ed myself into salivating every time I hear Vegas now because of this place. Side note: they have the best Gazpacho I've ever had. ever, ever had.

We walked the strip and went into hotels to do some shopping.

The store David & Goliath has great tongue-in-cheek humor.

Our favorite of the night: two peas standing on a world...underneath it read, "peas on earth".

Pawn Stars. We didn't see the guys.

They were supposedly eating lunch in the back.

We went to the B&B Ristorante by Mario Batali inside the Venetian.

The whole experience, down to the bathroom soap, was incredible.

We celebrated this cutie's birthday too.

I've never been to downtown Vegas before this trip. They had three stages set up, one of which "Johnny and June Cash" were singing on (spot on too). The long ceiling every hour does a tribute medley to different classic bands, we saw one for Queen. As always, the characters that were walking around were pretty great too.

We met up with Joe's family in Vegas (more on that later) and on one of the days we took a day trip to the Hoover Dam (FYI I'm going to resist damn/dam jokes for your sake). We stopped by the visitors center first. I was pretty ashamed by how little I knew about the Dam, but I'm glad I learned more of the history and it's importance before we saw it.

Joe's work threw a casino night for this year's Christmas party. After a Thanksgiving dinner at Thanksgiving Point we played for tickets at the tables and the tickets went towards insane prizes. open-ended airline tickets for two, random envelopes of cash, ipods, a 55" TV, days at the spa, computers...to name a few. AND those who didn't win anything were given gift certificates for dinner and movie. A great way to start the season.

The Move

We had some great opportunities come up within the last few months and with a lot of talks, prayer, and pros & cons lists, we've decided to stay in Utah. Crazy enough, we had already sold our contract at our place and so a move was in order. We found a new place we absolutely loved and are almost fully moved in. It's been really busy, but a lot of fun. Sometimes I feel like we're pretending to be married. Holding hands while we walk down rows of furniture and decorations...just playing house and hoping some day it comes true. The best part is that it's real. We're really excited for what's in store for the future.

Joe was an absolute stud on move-in weekend and this was his first break (sunday night).

In Cambodia it provided take-home rations of four kilograms of rice for two months to 13,500 pregnant and nursing women. In Uganda it fed 66,000 children for a week. In Nepal it fed over 108,000 Bhutanese refugees for three days. In Bhutan it fed 41,000 children for 8 days. In Myanmar it fed 750,000 cyclone affected people for 3 days. And the list goes on.
